Dubai for a long weekend plus desert. Thailand for beaches or Bangkok food. Bali for villas. Maldives if you can lock a resort now. Georgia and Azerbaijan for wine, mountains and friendlier entry than Schengen — popular with groups who left Europe planning too late.
If you still want Europe
October is shoulder season in much of Western Europe: fewer crowds, milder prices than July. You still need a Schengen visa. With VFS delays, starting the file in August–September for a late-October trip is already tight. December markets and Swiss snow need a winter file of their own.
